THE BEST EVER PUMPKIN CAKE

Ingredients:
1 large 29 oz can pumpkin
1 box yellow cake mix
1 cup milk
1 tsp cinnamon
1 cup melted butter
1/8 tsp cloves
1/2 tsp salt
3 eggs
1 cup sugar
1/4 tsp ginger
1/8 tsp nutmeg

Prepare pumpkin mixture pour in a 9″ by 13″ cake pan. Sprinkle yellow cake mix over pumpkin mixture. Melt butter pour over yellow cake. Bake at 350 for 1 hour.
Enjoy hot or cold.

Top with home made whipped cream or Cool Whip

Keep your Kids safe from those pesky allergies

Halloween holds special dangers for children with severe food allergies or sensitivities to food dyes and other additives.

The small candy bars passed out at this time of year may have different ingredients than their regular-size counterparts. So even if a certain candy is safe, the “fun size” version might not be.

The American Academy of Allergy, Asthma and Immunology warns parents of food-allergic children to check ingredients on packages or company Web sites to ensure there is no risk of a reaction.

If in doubt, do not let the food-sensitive child eat the candy.

The academy offers these tips to help families of food-allergic children be safe at Halloween:

Distribute safe snacks to neighbors and request that they be handed out to your child.
Work with your child’s teacher to plan a school party with safe foods and treats such as stickers or novelty erasers. Or pack treats from home that other students can give to your child.
Instead of trick-or-treating, host a party that focuses on costumes, games and other Halloween fun.
Teach your child to politely refuse home-baked goodies such as cookies or cupcakes.

John McCain and Barack Obama traded jokes instead of barbs at a charity event to benefit needy children. McCain said he’d replaced his advisers with Joe the Plumber, and Obama named “humility” as his greatest strength. To get you started, here are our Top 5 Tips for a Wine & Cheese Party:

1. I.D. The Cheese
Attending a wine and cheese party? Read our Guide to Being a Party Guest. Your guests will want to taste something new. Wine bottles already have labels, but cheese does not! Therefore:

Make sure you clearly label each cheese, either by sticking a toothpick with a label into the cheese or by placing a place card in front.
Earn extra points by writing a short description of the flavor, which you can also do for the wines you’re serving.

2. Create a Cute Solution for Used Toothpicks
Delicious appetizers and cubes of cheese are easily eaten with toothpicks. Problem is, even the best hosts often forget to provide guests with a place to put the used picks! Avoid that mistake by creating a cute solution:

Set out a plate with an orange on it
Stick a toothpick on top with the label “Used Picks” on it

Signs That Kids Are Too Busy

Sooner or later, kids who are too busy will begin to show signs. Every child is different, but overscheduled kids may:

Feel tired, anxious, or depressed
Complain of headaches and stomachaches, which may be due to stress, Missed meals, or lack of sleep
Fall behind on their schoolwork, causing their grades to drop
Overscheduling can also take a toll on kids’ friendships and social lives. Family life also can suffer — when one parent is driving to basketball practice and the other is carpooling to dance class, meals are missed. As a result, some families rarely eat dinner together, and may not take the extra time to stay connected. Plus, the weekly grind of chauffeuring kids all over the place and getting to one class, game, or practice after another can be downright tiresome and stressful for parents.

Tips for Busy Families
Even those parents who try to help their children cut back on some activities can run up against coaches who won’t tolerate absences and kids who want to keep up with their friends. However, it’s important for parents to step back and make sure that their kids aren’t burning out.

The key is to schedule things in moderation and choose activities with a child’s age, temperament, interests, and abilities in mind. If something’s too advanced, the experience is likely to be frustrating. If it isn’t engaging, kids will be bored. And when kids do something only to please their parents, it defeats the whole purpose.

Depending on a kid’s age and interests, it’s possible to set reasonable limits on extracurricular activities and make them more enjoyable for all.

Here are some simple suggestions:

Agree on ground rules ahead of time: For instance, plan on kids playing one sport per season or limit activities to two afternoons or evenings during the school week.
Know how much time is required: For example, will there be time to practice between lessons? Does your child realize that soccer practice is twice a week, right after school until dinnertime? Then there’s the weekly game, too. Will homework suffer?
Keep a calendar to stay organized: Display it on the refrigerator or other prominent spot so that everybody can stay up-to-date. And if you find an empty space on the calendar, leave it alone!
Even if kids sign up for the season, let them miss one or two sessions: Sometimes taking the opportunity to hang out on a beautiful day is more important than going to one more activity, even if you’ve already paid for it.
Try to carpool with other parents to make life easier.
Try to balance activities for all of your kids — and yourself: It hardly seems fair to expend time and energy carting one kid to activities, leaving little time for another. And take time for yourself, to do the things you enjoy, and to spend time together as a family.
Create family time: If you’re eating pizza on the run every night, plan a few dinners when everyone can be home at the same time — even if it means eating a little later. Schedule family fun time, too, whether it’s playing a board game or going on bike ride or hike.
Set priorities: School should come first. If kids have a hard time keeping up academically, they may need to drop an activity.
Know when to say no: If your child is already doing a lot but really wants to take on another activity, discuss what other activity or activities need to be dropped to make room for the new one.
Remember the importance of downtime: Everyone needs a chance to relax, reflect on the day, or just do nothing.
Slow It Down
Take a moment and think about your child’s life. If it’s hectic, sit down together and decide where you can cut back. If it’s overly structured, set aside time for blowing off some steam.

Riding a bike, taking a walk, playing a game, listening to music, or just doing nothing for a while can give kids some much-needed downtime. And never forget how important it is for kids to simply get together to play. Kids need time to just be kids.

Half a Bar of Dark Chocolate Can Help Your Heart

A mere half a bar of dark chocolate each week protects the heart against inflammation and consequent heart disease. A study by the Research Laboratories of the Catholic University in Campobasso Italy, in collaboration with the National Cancer Institute of Milan, found that 6.7 grams of dark chocolate each day was the idea amount to protect against inflammation.

Scientists know that heart disease is caused by inflammation, and keeping inflammation under control is a key to preventing cardiovascular disease. C-reactive protein is a marker for heart disease and is measured by a simple blood test.

Italian researchers studied 4,849 subjects in good health and free from risk factors such as cholesterol and high blood pressure. Of the group, 1,317 ate no chocolate, and 824 ate dark chocolate regularly.

“We started from the hypothesis,” said Romina di Giuseppe, lead author of the study, “that high amounts of antioxidants contained in the cocoa seeds, in particular flavonoids and other kinds of polyphenols, might have beneficial effects on the inflammatory state. Our results have been absolutely encouraging: people having moderate amounts of dark chocolate regularly have significantly lower levels of C-reactive protein in their blood. In other words, their inflammatory state is considerably reduced.”

Scientists said dark chocolate lowered the risk of cardiovascular disease one-third in women and one-fourth in men.

“We are talking of a moderate consumption,” said di Giuseppe. “The best effect is obtained by consuming an average amount of 6.7 grams of chocolate per day, corresponding to a small square of chocolate twice or three times a week. Beyond these amounts, the beneficial effect tends to disappear.”

“Maybe the time has come to reconsider the Mediterranean diet pyramid and take the dark chocolate off the basket of sweets considered to be bad for our health,” said Giovanni de Gaetano, director of the Research Laboratories of the Catholic University of Campobasso.

Corn, Avocado, and Tomato Salad Recipe for the Labor Day Holiday

Ingredients:
2 cups cooked corn, fresh or frozen
1 avocado, cut into 1/2-inch cubes
1 pint cherry tomatoes, halved
1/2 cup finely diced red onion
Dressing:
2 tablespoons olive oil
1/2 teaspoon grated lime zest
1 tablespoon fresh lime juice
1/4 cup chopped cilantro
1/4 teaspoon salt
1/4 teaspoon pepper

Combine the corn, avocado, tomatoes and onion in a large glass bowl. Mix together the dressing ingredients in another bowl, pour over the salad, and gently toss to mix.

It’s school time again!

You’re probably feeling excited and maybe a little sad that summer is over. Some kids feel nervous or a little scared on the first day of school because of all the new things: new teachers, new friends, and maybe even a new school. Luckily, these “new” worries only stick around for a little while. Let’s find out more about going back to school.

The First Day
Most teachers kick off the school year by introducing themselves and talking about all the stuff you’ll be doing that year. Some teachers give students a chance to tell something about themselves to the rest of the class.

When teachers do the talking on the first day, they often go over classroom rules so you’ll know what’s allowed and what’s not. Pay close attention so you’ll know if you need to raise your hand to ask a question and what the rules are about visiting the restroom.

You might already know a lot of people in your classes on the first day. But it’s a great day to make a new friend, so try to say hello to kids you know and new ones that you don’t. Make the first move and you’ll be glad you did and so will your new friend!

Moving to Middle School?
Sixth grade often signals a move to middle school or junior high, where you’ll find lockers and maybe a homeroom. This is just what it sounds like - a classroom you’ll go to each morning, kind of like your home in the school. In middle school, you might move from classroom to classroom for each subject. Your teachers know that this is a big change from elementary school and will help you adjust.

Most teachers let you pick your own seat on the first day, but by the second or third morning, they’ll have mapped out a seating plan. It’s a good idea to write down where your seat is in your notebook so you don’t forget.

Feeling Good on Day One
Seeing friends you haven’t seen in a while can make the first day a good one. You also can make the day feel special by wearing an outfit you like. Maybe you got a great T-shirt on vacation, or your new sneakers put a spring in your step. If you wear a uniform, you might wear a favorite watch or piece of jewelry to show your personal style.

It can make you feel good to be prepared and have all the supplies you need. Some schools distribute supply lists before the year begins, so you can come stocked up on pencils, folders, and whatever else you’ll be needing. Once you’ve covered the basics, you might tuck an extra dollar or two in your backpack for an emergency (like forgetting your lunch money). Or maybe you’d like to bring along a book or magazine to read while you’re on the bus.

Whatever you put in your backpack, make sure you pack it the night before. This prevents the morning panic when you can’t find your homework or lunch box. Speaking of lunch, that’s something else that can help you feel good at school - whether it’s the first day or the 100th day. Pack it the night before if you don’t like what’s on the menu at the cafeteria. Try to include a variety of foods in your packed lunch, especially fruits and vegetables.

Get Oriented
The first day of school is your first chance to find your way around a new school, or learn the pathways to new classes in your old school. It’s a lot to learn in one day, so don’t be surprised if you need a reminder or two.

It might help to write a few notes to yourself, so you’ll remember the important stuff, like your locker combination and that lunch starts at 11:43, not 12:10. Before you know it, your fingers will fly as you open your locker and you won’t have to check your notes to know what time lunch starts!

A Bad Start?
What if you hate school by the end of day one? Teachers recommend giving things some time to sort themselves out - once you know your way around the building and get adjusted to the new routine, you’ll probably feel better. If those feelings don’t fade, talk to your mom, dad, teacher, or school counselor.

Here are a few final tips for a fantastic first day:

Get enough sleep.
Eat a healthy breakfast.
Try your best.
Develop good work habits, like writing down your assignments and turning in your homework on time.
Take your time with school work. If you don’t understand something, ask the teacher.
Keep a sense of humor. One teacher we know shows his new students a picture of himself graduating high school - a grinning ape in a red graduation cap and gown. This usually makes the kids laugh, and it’s a good way to remind them that school is fun!

FAU galleries present display of election paraphernalia

The University Galleries in Florida Atlantic University’s School of the Arts in the Dorothy F. Schmidt College of Arts and Letters presents “Political Circus: A Three-Ring Reflection on the 2008 Election Campaigns,” an exhibition presenting election campaign paraphernalia and contemporary artworks examining the current presidential campaign.

The exhibition opens Sept. 5 and runs through Nov. 1 in the Ritter Gallery on FAU’s Boca Raton campus. There will be an opening symposium and reception on Friday, Sept. 5 from 6 to 9 p.m. The exhibition and reception are free and open to the public.

The first “ring” of Political Circus, which was selected by Jane Caputi, professor of Women’s Studies at FAU, features items such as bumper stickers, posters, t-shirts, buttons, hats and other paraphernalia related to this historic election.

The section is called Hating Hillary, Baiting Barack, and Mocking McCain and includes themes such as “Not One of ‘U.S.’;” “Untrustworthy Mulatto;” “The Other” and “Hillary as Cracked and Crazed.” Caputi, along with Sika Dagbovie, FAU assistant professor of English, provides analysis and critique that directly reference the ways that sexist, racist, homophobia and age stereotypes are echoed in mainstream media.

“These artifacts indicate the resentment of some quarters of American society against any sharing of power with non-traditional groups, as well as a retrenchment and continuing reinvention of malicious stereotypes based on sex, race, religion, age, sexual preference and gender,” said Caputi. “It is essential to participate in and extend a public airing and discussion of these trends.”

The second “ring” of the exhibition features six artists from the eastern seaboard who responded to an open artists call to submit proposals for works that deal with or respond to the 2008 election.

Many of the selected works employ fabric or textile media such as rugs and a knitting circle. New York-based artists Cat Mazza and Sabrina Gschwandtner have exhibited their conceptually oriented knitting works together before.

For the Ritter Gallery exhibition, Mazza will show her Stitch for Senate that consists of 100 knitted helmet liners personalized with the stitched name of each U.S. Senator.

Another fabric-based object is Pip Brant’s The Flying Carpet, an interactive rug combining the geography of “the fertile crescent” and Black Hawk helicopters. Other works in this section include Atlanta-based Michi’s poster and button campaign for an imagined candidate named “Petro,” and two flag photo-collages by University of Miami Art Professor Tom Lopez.

The third “ring” of the exhibition combines artworks selected from area collections, which range from subtle investigations of American politics, race and culture by internationally recognized artists. This includes Paul McCarthy, whose video combines images of Disneyland and Adolph Hitler; Kara Walker, whose trademark silhouetted images are generated from her interpretation of slave narratives; and Jenny Holzer, who presents her Inflammatory Essays that the artist posted anonymously in the streets of New York in the late 1970s.

This ring also includes a project created by New York-based artist Kenneth Tin-Kin Hung. Hung’s more recent animated video work, “Washington is Hollywood for Ugly People and Election/Erection,” will be featured.

A central element in the Political Circus exhibition will be an open forum for visitors and students to voice their opinions by making their own works of art that the gallery will allow to be hung on a special section stationed early on in the exhibition.

A positive sense of self is one of the greatest gifts you can give your child. Children with high self-esteem feel loved and competent and develop into happy, productive people. To help build your child’s positive self-image as he grows, consider these dos and don’ts.

Do give children choices. Giving children choices — within a reasonable set of options preselected by you — makes them feel empowered. For example, at breakfast you might offer your child the option of eggs or pancakes. Learning to make simple choices while he’s young will help prepare your child for the more difficult choices he’ll face as he grows.

Don’t do everything for her. Be patient and let her work things out for herself. For example, it may be faster and easier to dress your preschooler, but letting her do it herself helps her learn new skills. The more she meets new challenges, the more competent and confident she’ll feel.

Do let him know no one is perfect. And explain that no one expects him to be. The way you react to your child’s mistakes and disappointments colors the way he will react.

Don’t gush or offer insincere praise. Kids are masters at detecting insincere praise or baseless compliments. Praise your child often, but be specific in your compliments so your words don’t ring hollow. For instance, instead of reacting to your child’s latest drawing with, “Wow, that’s great. You’re the best artist in the world,” try something like, “I really like how you drew the whole family. You even included details like Daddy’s beard.”

Do assign age-appropriate household chores. Give children responsibility for tasks such as setting the table, walking the dog, and folding laundry. They’ll increase their feelings of competency and bolster their problem-solving skills.

Don’t draw comparisons between your children. Instead, appreciate each one’s individuality and special gifts.

Don’t call children names or use sarcasm to make a point. Never belittle your child’s feelings. When you get angry take a short break so you don’t say anything you’ll regret. And keep in mind, you can dislike a child’s actions without disliking the child. Be sure to illustrate the difference to your child.

Do spend one-on-one time with your child. Whether it’s grabbing a bite to eat or taking a bike ride, try to schedule some alone time with your child at least once a week. This is a great opportunity to talk about what’s on her mind and to cement the bond the two of you share.

Strawberry Shortcut Cake for July 4th

Cake:
1 cup all-purpose flour
3/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon fine salt
4 tablespoons unsalted butter, melted
1 large egg, beaten
1/2 cup whole milk
1 teaspoon pure vanilla extract
Strawberries and Cream:
2 pints strawberries
1 tablespoon granulated sugar
1 cup heavy cream
1 tablespoon confectioners’ sugar
1/2 teaspoon pure vanilla extract

For the cake: Preheat the oven to 375 degrees F. Butter an 8-inch round cake pan, line it with parchment paper, butter the paper, and dust the pan lightly with flour.
Whisk the flour with the granulated sugar, baking powder, and salt in a medium bowl. Lightly whisk in the butter, egg, milk, and vanilla, just until smooth. Pour the batter into the prepared cake pan and bake until a toothpick inserted in the center comes out clean, about 25 minutes. Cool on a rack for 10 minutes, then turn it out of the pan, flip upright, and cool completely on the rack.

For the strawberries and cream: Set aside 1 pint of the best-looking whole berries for topping the cake. Hull and thinly slice the rest of the berries and toss with the granulated sugar. Set aside. Whip the cream with the confectioners’ sugar and vanilla to soft peaks. Refrigerate until ready to use.

To assemble the cake: Cut the cake in half horizontally with a serrated knife. Place the bottom layer cut side up on a cake stand or serving plate. Drizzle the juices from the sliced berries over the cut sides of both halves. Fold a couple tablespoons of the whipped cream into the sliced berries and spread over the bottom layer. Top with the other piece of cake, cut side down. Spread the remaining whipped cream on the top of the cake and top the cake with the whole berries.

Know-How: Cutting a cake into layers is easy as saw-spin-separate: Begin to saw the cake in half horizontally. Just before you reach the middle of the cake, give it a quarter turn. Continue to saw almost to the center, then give it another quarter turn and saw again until you reach your original point of entry. Saw completely through the cake’s center and separate the layers.

Sponsored by the American Public Transportation Association (APTA), National Dump the Pump Day encourages people to ride public transportation to save money, conserve gasoline, and help reduce greenhouse gases. Households with two workers and one car that use public transportation save an estimated $6,200 every year, compared to households with no access to public transportation. Public transportation also plays an important role in helping to reduce greenhouse gases.

By participating in National Dump the Pump Day, Palm Tran officials hope people who have never used public transportation will give it a try, instead of driving their car. The city of Boca Raton wants to get certification as an environmentally friendly community

Boca applies for certification as ‘green’ friendly community
Assistant City Manager Mike Woika outlined the application process to the City Council at a workshop meeting last week.

“Boca Raton is a leader in sustainability,” he said, pointing out a term that’s become synonymous with “green” friendly.

He said Boca Raton has taken a lead in processing wastewater into reclaimed water. The city, he said, also practices “environmentally sensitive land acquisition, recycling and energy reduction.”

Woika told council members he is filling out the application to have Boca certified by the Florida Green Building Coalition, which has established Green Local Government Designation Standards.

Ironically, to go “green,” Boca is applying for a “silver” designation. Other, more stringent regulations are gold and platinum.

What the city will get from the designation, he said, “is the recognition that it has done things that are environmentally friendly.”

“We will go through a list of standards and see how we stack up,” he told the Boca Raton News after the meeting. “We want to see what others have done.”

He said it will take some 60 to 90 days to file the application. As part of the process, the city will be reviewed in 221 “credit” areas, with varying possible point totals in the areas of city administration, agriculture, building and development, economic development, emergency management and public safety, housing and human services, resource management, environmental protection, public works and engineering.

The application process also involves an in-house assessment, review and evaluation. The Florida Green Building Coalition assigns a project evaluator to meet with the city and verify the application forms.

To earn a “silver designation,” the city has to receive 20 to 40 percent of maximum applicable points. Gold certification requires 40 to 60 percent of applicable points and platinum status requires a tally of 61 percent or higher. Recertification is required every five years.

Woika said he feels the city can get the silver designation “without too much work.”

Conjuring up images of my Barbie-doll snap-on-clothing days, the idea of the C-string is that you pop it on using the wire, and it stays put without the strings.

According to the promotional blurb, it is “sexy, elegant and completely unique.” Their claim—legitimate for anyone who has battled to conceal thong lines under a clingy mini-dress—is that you wear it with outfits that demand a nonexistent panty-line but also underwear or even as a protective measure with swimwear to avoid unfortunate tan lines.

The Mail reporter, who road-tested the C-string, seemed less than impressed, claiming that “You need the limbs of Elle Macpherson to carry this look off” and “I’m afraid I just look as though I’m not wearing anything, which frankly looks worse.” Apparently the C-string is more realistic for red-carpet goers than real-life women.

RECIPE INGREDIENTS:
2 1/2 to 3 cups white icing
1 baked 13- by 9-inch cake
4 baked cupcakes
5 baked mini cupcakes
1/4 cup green icing
Green gel icing (optional)
Candy for decorations, such as spearmint leaves, colored sugar, colored nonpareils, LifeSavers Gummies, sour rings, jujubes, M&M’s Minis, and Jujyfruits
1. First, frost the 13- by 9-inch cake with the white icing. (Tester’s Tip: To avoid dark crumbs in the light-colored icing, we used a white cake and cupcakes.) Arrange the cupcakes and mini cupcakes (you can cut them in half horizontally for thinner flowers if you wish) on top of the cake, wherever you’d like a flower. Cover them with the white icing as well, including the sides.

2. Using a pastry bag (or a plastic bag with one small corner cut off), pipe a green icing stem for each flower. If you’d like, you can also add green gel icing grass. Place spearmint leaves along the icing stems, then decorate the cupcakes with colored sugar and candies to create a garden of colorful blooms. You can also pipe on dollops of icing, like some of the flowers.

Raising a Summer Reader

Once those lazy days of summer arrive and the schedule is packed with swimming, camp, and family vacations, it can be a challenge to find time for learning. But you don’t have to let your child’s reading skills grow cold once school’s out. There are plenty of ways to make reading a natural part of your summer fun!

Explore the library. Visit your local library to check out books and magazines that your child hasn’t seen before. Many libraries have summer reading programs, book clubs, and reading contests for even the youngest borrowers. With a new library card, your child will feel extra grown up checking out books.

Read on the road. If you’re going on a long car trip, make sure the back seat is stocked with favorite reads. When you’re not at the wheel, read the books aloud. Get some audiobooks (many libraries have large selections) and listen to them together during drive time.

Make your own books. Ask kids what they like best about summer – maybe it’s baseball, ice cream, or the pool. Then have them draw pictures of it or cut out pictures from magazines and catalogs. Help them paste the pictures onto paper to make a booklet and write corresponding text. When you’re done, read the book together. Keep it on the bookshelf and reread it when you need to fend off the cold-weather blahs!

Keep in touch. You don’t have to go away to write about summer vacation. Even kids who are staying close to home can pick out postcards and use them to tell friends and relatives about summer adventures. Ask a relative to be your child’s pen pal and encourage them to write to each other regularly.

Keep up the reading rituals. Even if everything else changes during the summer, keep up your child’s reading routines. Read together every day – whether it’s just before bedtime or under a shady tree on a lazy afternoon. And everybody loves to read at the beach. Just brush the sand off the pages. It’s no sweat!

Giant Cupcake Recipe

In this recipe the Wilton’s Giant Cupcake pan was used.
This is the cake recipe:

Preheat oven to 325 degrees.

1 Betty Crocker Chocolate Fudge Cake mix (or any flavor you wish)
1 cup flour
1 cup sugar
1 small box Devil’s Food instant pudding
pinch of salt

Mix dry ingredients well. In another bowl, mix:

4 jumbo eggs
1 cup sour cream
1 1/3 cup whole milk
1 cup butter, melted

Mix for 30 seconds and then for 2 minutes on medium speed. Put 3 cups batter in top section. 4 cups in bottom section or just to a little over half full

Bake for 45 - 60 minutes. Cool in pan for 10 minutes. Frost and decorate as desired!!

Why: As the countdown to Sex and the City: The Movie continues (May 30th, people), it seems as if this city has become utterly punch drunk with everything SATC. From magazine features to character lingerie, we just can’t get enough of our four leading ladies.

So it didn’t really get our panties in a bunch (pardon the pun) when we found out you can now purchase the same pearl thong - not the EXACT same - that Richard gave Samantha in Episode 69 (pardon someone else’s pun).
