Uptown SMores
Prep: Cook: Ready In Serves 4

Ingredients
8 large marshmallows and set aside
8 thin squares (each 2 inches) superior dark chocolate, such as Lindt
16 chocolate chip cookies, preferably homemade
Cooking Instructions
Skewer the marshmallows and set aside.

If using a charcoal grill, prepare this dessert once the coals have died down after the main course. Carefully remove the grill grate and rake the coals into a hot, glowing pile. Roast the marshmallows over the fire until sizzling, melted, and darkly browned all over, turning to ensure even cooking. This will take 3 to 6 minutes.

If using a gas grill, preheat to high and oil the grate. Place the skewer directly on the hot grate and, watching carefully, grill until the marshmallows are lightly browned, about 1 minute. Lift the skewer and brown the other side, 1 minute more.

Place a piece of chocolate on the bottom (the flat side) of a cookie. Ease a hot marshmallow off the skewer onto the chocolate. Place a second cookie (flat side down) on top of the marshmallow to make a sandwich. Wait a few seconds for the marshmallow to melt the chocolate, then eat the smore like a sandwich. Nostalgia never tasted so good!

Tip: You can use any type of cookies (from chocolate chip to gingersnaps) any any type of chocolate (from bitter to white).
